Buckwheat Fries (Kanchemba)
Kanchemba (कन्चेम्बा) is a traditional snack from the Thakali community of Nepal, often described as “buckwheat fries” or “Thakali finger chips”. It is a gluten-free dish made from buckwheat flour that is crunchy on the outside and soft on the inside.
Dhindo
Dhindo (ढिँडो) is a beloved, traditional Nepali staple—essentially a thick, nutritious porridge or dough-like paste made by boiling flour in water.
Long considered the “fuel of the Himalayas,” it was traditionally a staple in rural hilly regions where rice was hard to grow.
It is highly nutritious, fiber-rich, and beneficial for diabetic patients as it has a lower glycemic impact than white rice.
Dried Meat Curry (Sukuti ko Ledo)
Sukuti ko Ledo is a delicious and popular Nepalese dish, prepared with rehydrated dried meat (sukuti) in a thick, spicy sauce. The term “ledo” specifically refers to the smooth and creamy consistency of the dish.
Often eaten with rice or chiura (pounded rice).
Mustang Fried Potatoes
Mustang Fried Aloo is a famous potato dish from Nepal’s Mustang district, known for its unique taste and texture. Made using local, high-altitude
Mustang potatoes, which are smaller, firmer, and more flavorful than regular ones, the potatoes are boiled, sliced or halved, then deep-fried or pan-fried until golden and crispy. They’re usually served with
salt, chili powder, timur (Sichuan pepper), and sometimes yak cheese or aachar. It’s a simple yet iconic dish, especially popular among trekkers and locals in the Himalayan region.
Sichuan Pepper Chutney (Timur ko Chop)
Sichuan Pepper Chutney, prepared with timur, has a pungent, tangy and slightly numbing flavor, as Sichuan pepper provides a unique tingling sensation on the tongue.
This chutney is particularly appreciated with momos, meat dishes or rice.
