Directions

Peel the pineapples and cut the fresh flesh into small pieces.

In a saucepan, mix the water, the pineapples and the sugar (or the jaggery powder).

Boil the water and whisk until the sugar is dissolved.

When the water boils, simmer for about 10 minutes, stirring occasionally.

Remove from heat and let steep for 15 minutes.

Strain the syrup into an airtight container. Squeeze the pineapples to extract as much juice as possible.

Keep refrigerated for at least 2 weeks.

Later pour the syrup into a glass with fresh water and mix well. You can also use it for coktails, moktails, sodas or pancakes.
