Corn Syrup is used in many homemade desserts. It controls the crystallization of sugar when making homemade candies, jellies, jams, baked goods, syrups and other confections to keep them silky smooth and not grainy.

Directions

Pour the water and the sugar into a saucepan and bring to a boil over medium heat. Stir well to dissolve the sugar in the water.

Add the salt and the lemon juice (or cream of tartar).

Lower the heat and continue stirring and let the syrup simmer gently until it reduces considerably and becomes a thick syrup that slowly drips off your spatula (about 20 min).

Remove from heat and allow to cool to room temperature.

Store in an airtight container at room temperature. Will keep for several weeks.

You can use it to make homemade candies (ex: candied apples), jellies, jams, baked goods, syrups and other confections to keep them silky smooth and not grainy.
