Chana

Chana refers to chickpeas, a highly nutritious, protein-rich legume staple. Used either whole or split (chana dal), they are commonly prepared in a spicy, tomato-onion curry known as chana masala or chole.

Directions

Wash the chickpeas thoroughly.

Soak them in 1 liter of water overnight.

Wash them and place them in a pressure cooker with water. Adjust the amount of water if necessary. They should be covered with water by 1cm.

Stop after 5-6 whistles. The chickpeas should be tender and melting. If not, continue cooking.

Finely chop the onions, tomatoes and coriander leaves.

Grind the cardamom.

Heat the oil in a saucepan. When hot, add the cardamom powder.

Then add the onions.

Add the turmeric powder, red chili powder, garam masala, garlic paste, ginger paste, cumin powder, and butter (or ghee). Stir everything together and cook for another 3 to 4 minutes.

Once finished, let the curry cool. Then blend it.

Mix the chickpeas with the puree. Add additional water depending on the desired thickness. Mix well. Cover and simmer for 15 minutes.

Garnish with coriander leaves.

Ready. Enjoy! It is frequently served with bread like bhatura, buckwheat roti, roti, puri, or rice.
