Sun-Dried Candied Pineapple Slices

Dry candied pineapple is a sweet, chewy confection made by simmering pineapple slices or chunks in a sugary syrup until they become translucent. It is a popular, high-sugar tropical treat that differs from standard dehydrated pineapple, which is simply dried without the added sugar-syrup soaking process.

Directions

Pour the water and the sugar into a saucepan and bring to a boil. Stir well to dissolve the sugar in the water.

Add the pineapple rings.

Leave the pineapple rings to soak in water for 10 minutes. Make sure they are fully submerged. Turn them over occasionally.

Simmer gently for 30 minutes. The water will thicken and become syrupy. Stir occasionally.

Turn off the heat and remove the pineapple rings from the syrup.

Drain them.

Place them on a baking sheet.

Cover your pineapples with an insect net to prevent insects from getting in.

Place the pineapples in a sunny, well-ventilated spot for a few days, depending on the humidity and amount of sunlight. Raise the trays about a meter off the ground to promote air circulation and faster drying. Do not leave them outside overnight, as the evening chill could cause them to absorb moisture again.

Ready when they are dry.

Place them in an airtight container and put them in the refrigerator.

You can use dried candied pineapples during your hikes, in energy bars or in muesli.
