Directions

Peel the kiwis and cut them into thin slices (about 5 mm).

In a saucepan, combine the sugar and water and bring to a boil. Reduce the heat and simmer the syrup until the sugar is completely dissolved.

Add the kiwi slices. Simmer, covered, for about 1 hour. Check regularly and add water if necessary.

Turn off the heat and remove the kiwi slices from the syrup.

Drain them.

Place the kiwis on a baking sheet.

Cover your kiwis with an insect net to prevent insects from getting in.

Place the kiwis in a sunny, well-ventilated spot for a few days, depending on the humidity and amount of sunlight. Raise the trays about a meter off the ground to promote air circulation and faster drying. Do not leave them outside overnight, as the evening chill could cause them to absorb more moisture.

Ready when they are dry.

Place them in an airtight container and put them in the refrigerator.

You can use dried kiwis during your hikes, in energy bars or in muesli.
