Directions

Sterilize the glass jars and their lids by boiling them in water for 10 minutes. Remove them from the water and let them air dry.

Roast all the spices (green cardamon pods, black peppercorn, fennel seeds, black cardamon pods, cloves, the carom seeds, the cinnamon sticks, the nutmeg and the dried ginger) in a pan on low heat until they smell good (about 3-5 minutes).

Once ready, place them on a plate and let them cool completely.

Grate the cinnamon sticks and the nutmegs.

Break the dried ginger into pieces.

Put all the spices, the cinnamon powder, the nutmeg powder and the dried ginger into the mixing bowl.

Grind everything into a fine powder.

Store the masala chai in a dry, airtight glass jar.
