Directions

Finely chop the ginger if you wish to add it.

Crush the bay leaves, the cloves, the cardamom, and the black pepper in a mortar. This will help release the flavors and aromas.

In a saucepan, heat the milk and the water with the cardamom, the black pepper, the cloves, the bay leaves, the cinnamon, and optionally the ginger. Heat over medium heat and simmer for 2 to 3 minutes. All the spices need a little time to infuse.

Add the tea leaves or the teabags and boil for 2 minutes.

Then add eventually the sugar and let it boil for 1 minute.

Filter the tea and fill your cups.
