Vegetables Chowmein is a popular Indo-Chinese and Nepali dish featuring stir-fried noodles mixed with vegetables (like cabbage, carrots, capsicum), and savory sauces (soy, tomato) with Chinese seasonings, creating a hearty, flavorful, and quick meal often found in street food stalls and restaurants in Nepal and India. 

The name literally translates to “fried noodles” (chǎomiàn).

Directions

First, cook the noodles in salted water. They should be slightly firm, as they will cook further later with the vegetables and spices. Then drain them.

Peel and grate the carrots.

Remove the seeds from the inside of the capsicums and chop them.

Boil the broccoli heads, capsicums and carrots in water for 5 minutes.

Chop the cabbage and onions.

Finely chop the garlic cloves and the green chilies.

Heat a pan with mustard oil and add the onions and garlic. Stir.

Add all the vegetables: capsicums, carrots, green chilies, broccoli heads and cabbage.

After 2 minutes, add the soy sauce, tomato sauce, salt and pepper and mix well.

Add the boiled noodles. Stir and cook over low heat for 4 to 5 minutes.

Ready! Enjoy your chowmein with a hot or cold drink, a sauce (chutney) and/or pickles.
