Directions

Soak the soybeans in water for half a day.

Drain the soaking water and rinse the soybeans thoroughly under cold running water. Discard the water.

Peel the soybeans.

Put the soybeans in a blender and blend them for a few seconds, just to break them up.

Add a quarter of the water and mix until you get a smooth, thick and creamy liquid.

Transfer the contents to a saucepan. Add all the water. Heat over medium heat, stirring regularly.

When the mixture starts to boil, let it cook for 3 to 4 minutes and remove the foam that forms on the surface.

Reduce the heat and simmer for 15 minutes. Stir occasionally.

Turn off the heating and let it cool down for a few minutes.

Strain the milk through several layers of cheesecloth or a nut milk bag and place it over a measuring cup. You should obtain an amount of milk roughly equal to the amount of water used.

Ready! Keep refrigerated. Enjoy with chia seeds for breakfast.
