Directions

Finely chop the onions and garlic cloves.

Heat the mustard oil over low heat and toast the peanuts.

Add the onions and garlic cloves. Cook for 3 to 4 minutes.

Add the mustard seeds, cumin seeds, and curry leaves. Mix everything together.

Cook until the onions are soft. Once cooked, remove from the heat.

Let everything cool.

Put the mixture in a blender with the lemon juice, salt, red chili powder, sugar (or jaggery powder), and water.

Blend until you have a smooth chutney.

Transfer the chutney to a bowl.

Ready! Enjoy your chutney with aloo parutha, pakoras, momos, breads, rice-based dishes, meats, fish, chowmein or wraps.
