Lentils Pancake (Bara)

Bara, or ‘Wo’ in the Newari language, is a traditional and much-loved Newari dish from Nepal, especially popular in the Kathmandu Valley.
It’s a savory pancake made from ground lentils (typically black or yellow lentils). These popular Newari snacks are crispy on the outside, fluffy in the middle, and seasoned with ginger, garlic and cumin. They are served as a daily snack or, symbolically, as part of ‘sagun’ (good luck food) during festivals and weddings.

Directions

In a bowl, soak the lentils in water for 8 hours or overnight.

Optionally chop the green chilies and coriander leaves.

Once the mixture has reached the consistency of porridge, pour it into a bowl. Add the ginger, garlic, salt, cumin powder, and, if necessary, coriander leaves and green chilies. Mix well.

Let stand for at least half an hour.

Heat a frying pan with a tablespoon of oil.

Cook the dough in the pan. Round shape and not too thick, a little less than 1.25 cm.

When one side becomes lightly golden, turn it over to the other side.

When both sides are golden brown, it’s ready. Enjoy your paratha with a sauce (chutney) of your choice, a fried egg, a hot or cold drink.
