Banana Pancake is a sweet, fluffy breakfast or snack item that has become quite popular in Nepal, especially in tourist areas and urban cafés. While not a traditional Nepali dish, it has been widely embraced in places like Kathmandu, Pokhara, and Lumbini, where it’s often featured on “traveler’s menus” or in mountain teahouses along trekking routes.

Directions

Peel and mash the banana with a fork.

If using butter instead of oil, melt it.

In a bowl, add the milk, oil or melted butter, eggs, sugar, and mashed bananas. Mix well.

Then add the wheat flour, white flour, salt, and baking powder to the banana mixture. Whisk and mix well to avoid lumps.

Heat the pan over medium heat with oil or butter.

Pour the batter into the pan and cook for 3 minutes, or until bubbles appear on the surface. Turn it over and continue cooking until both sides are lightly browned. Once the batter is cooked, transfer it to a plate.

Ready! Serve it plain, with honey or chocolate and with a hot or cold drink.
