Chai Masala

Chai Masala is a fragrant, warming blend of ground spices used to elevate traditional Indian tea (chai). It typically consists of a combination of green cardamom, ginger, cinnamon, cloves, and black pepper, which are toasted to release their essential oils and then ground into a fine powder.

Directions

Sterilize the glass jars and their lids by boiling them in water for 10 minutes. Remove them from the water and let them air dry.

Roast all the spices (green cardamon pods, black peppercorn, fennel seeds, black cardamon pods, cloves, the carom seeds, the cinnamon sticks, the nutmeg and the dried ginger) in a pan on low heat until they smell good (about 3-5 minutes).

Once ready, place them on a plate and let them cool completely.

Break the dried ginger into pieces.

Grind everything into a fine powder.

Store the masala chai in a dry, airtight glass jar.
