Directions

Hull the strawberries and cut them into small pieces.

In a saucepan, mix the water, the strawberries and the sugar (or the jaggery powder).

Boil the water and whisk until the sugar is dissolved.

When the water boils, simmer for about 15 minutes, stirring occasionally.

Remove from heat and let steep for 15 minutes.

Strain the syrup into an airtight container. Squeeze the strawberries to extract as much juice as possible.

Keep refrigerated for at least 2 weeks.

Later pour the syrup into a glass with fresh water and mix well. You can also use it to flavor drinks (strwaberry milk, moktails, coktails, iced coffees, latte), top desserts (ice-creams, cheesecakes, cakes, yogurt, curd) and enhance breakfast dishes (pancakes, waffles, crepes).
