Directions

In a pan, fry the cashews until golden brown.

Remove the cashews and set them aside.

Roughly crush them into small pieces.

Grate the jaggery if it is not already powdered.

In another pan, roast the millet flour (or ragi) over low heat for 6 to 7 minutes, until it gives off a pleasant aroma. Stir constantly.

Add the ghee to the pan and let it melt. Then mix the ghee well with the flour and continue cooking for a few minutes.

Switch off the flame.

Add the jaggery, the crushed cashews and the cardamom powder and mix well.

While the mixture is still warm, take a handful, squeeze it firmly and shape it into a ladoo.

Store the ladoos in an airtight, dry container.

Ready! Enjoy these ragi ladoos during the Makar Sankranti festival or savor them as a treat. Pair them with a hot or cold drink.
