Directions

Finely chop the onions, the capsicums, the green chilies, the coriander leaves and optionally the cherry tomatoes.

Crack the eggs into a bowl.

Add the onions, the capsicums, the green chilies, the coriander leaves, the red chili powder, the turmeric powder, the cumin powder and the salt.

Whisk everything together with a fork.

Heat the oil (or butter or ghee) in a pan.

Pour one person’s worth of liquid into the pan. Swirl the pan so that the mixture covers the entire pan.

Cook for 3 minutes. Then turn the omelet over to cook the other side for 3 minutes. If it is not cooked through, add 1 minute of cooking time on each side.

Pour the omelet onto a plate.
