Gud Pak (or Gudpak/Gundpak) is a traditional Nepali sweet and a popular, nutritious dessert. It is particularly famous in Kathmandu and is often enjoyed for its soft, gooey, and creamy texture.

It is often given as a traditional gift during festivals, special occasions, and as a nourishing, energy-packed treat for new mothers (known as sutkeri gudpak).

Chop the cashews, the pistachios and the almonds.

Heat a pan.

When the pan is hot, add the ghee.

When the ghee is melted, add the edible gum and fry them.

When the edible gum becomes crispy, transfer it to a plate and let it cool.

When it is cold, take a grinding jar, add the roasted edible gum and grind it into a coarse powder.

Transfer the powder into a bowl.

Put the almonds, cashews and pistachios in a grinding jar and grind them into a coarse powder.

In the same pan with ghee, roast the wheat flour over low heat until it turns golden and gives off a sweet aroma.

Add the powdered edible gum, the dried fruit powder and the grated coconut to the pan and roast thoroughly.

Add the brown sugar (or jaggery), the cardamom powder and the grated nutmeg to the flour and let it melt (stirring constantly).

When the brown sugar (or jaggery) has melted, remove from the heat and add the powdered milk and mix well.

Spread ghee on a plate and grease it.

Pour the mixture into the dish, smoothing the surface. Let it rest for 20 to 25 minutes.

Using a knife, cut the mixture into a diamond shape and carefully remove it.

Place in an airtight container for storage.

Ready to serve. Enjoy with a hot or cold drink.
