Sattu Powder is a nutrient-dense, roasted flour staple, primarily made from black chickpeas (chana), providing high protein, fiber, and iron. While traditional sattu focuses on chana, a “6-flour” blend enhances nutritional value and flavor. It is a natural cooler, digestive aid, and versatile ingredient for drinks, parathas, and porridge.

Directions

If you wish to soak the chickpeas, start with step 1, otherwise go directly to step 4.

Soak the chickpeas overnight.

Rinse the chickpeas thoroughly. Repeat this process 3 to 4 times.

Leave them to dry in the sun for half a day.

Heat a pan over medium heat and roast them for 1 minute.

Remove the peels.

Heat a pan and roast the whole wheat over low heat until golden brown (5 to 6 minutes). Stir regularly.

Pour onto a plate and let cool.

Roast the barley in the same pan, also over low heat, for 5 to 6 minutes. Stir regularly.

Pour onto a plate and let cool.

Add the corn, the soybeans and the bengal gram (black chickpeas) flour to a pan over medium heat and stir frequently for 10 minutes until golden brown and crispy.

Pour onto a plate and let cool.

Grind all the ingredients into a fine powder.

Sift the powder through a sieve. This sifting process separates the coarse sattu particles from the finer particles.

Place in an airtight jar.

Use your sattu to make pancakes, porridge, cookies, hot drinks, paruthas or ladoos.
