Sattu Porridge is a nutritious, high-protein breakfast dish made from sattu (roasted gram flour). Often called the “poor man’s protein,” it is highly popular in India and Nepal for its cooling properties and energy-boosting benefits.

Directions

Optionally, crush the cardamom pods.

Optionally, mash the banana.

Optionally, cut the almonds and the cashews into small pieces.

In a saucepan, combine the sattu powder, the brown sugar (or jaggery powder), the cardamom pods and the water. Mix until you have a smooth paste.

Cook everything over medium heat until thickened. Stir constantly while cooking.

When bubbles appear on the surface, add the milk and, if desired, the bananas, then stir. Let it simmer for one minute.

You can optionally garnish it with dry raisins, almonds, cashews and/or dried coconut.

Ready! Enjoy your porridge with a hot or cold drink.
