Directions

Chop the almonds and the cashews.

Grate the carrots.

In a saucepan, melt the butter (or ghee).

Once the butter (or ghee) has melted, add the cardamom powder. Stir over low heat for 1 minute.

Pour in the milk, the sugar and the carrots. Simmer over low heat until thickened and the carrots are tender, stirring regularly (about 25 minutes).

Pour the carrot pudding into a bowl and garnish with almonds, cashews and dry raisins.

Ready! Serve hot. Enjoy your carrot pudding with a hot or cold drink.
