Directions

If you do not wish to soak the chickpeas, the black gram and the green lentils, skip steps 2, 3 and 4.

Chop the walnuts, the almonds, the cashews, the pistachios, the dried coconut and the pumpkin seeds.

Soak the chickpeas, the bengal gram (black chickpeas) and the black lentils overnight.

Rinse the chickpeas, the bengal gram (black chickpeas), and the black lentils thoroughly. Repeat this process 3 to 4 times.

Leave them to dry in the sun for half a day.

Heat a pan over medium heat and roast the chickpeas for 1 minute.

Remove the skins from the chickpeas.

Heat a pan and roast the whole wheat over low heat until golden brown (5 to 6 minutes). Stir regularly.

Pour onto a plate and let cool.

Roast the barley and millet in the same pan over low heat for 5 to 6 minutes. Stir regularly.

Pour onto a plate and let cool.

Add the corn, soybeans, bengal gram (black chickpeas), black lentils and dried green peas to a pan over medium heat and stir frequently for 10 minutes until they become golden brown and crispy.

Pour onto a plate and let cool.

Roast the walnuts, the almonds, the cashews, the pistachios, the dried coconut, the sunflower seeds and the pumpkin seeds for 2 to 3 minutes.

Pour onto a plate and let cool.

Roast the cumin seeds, the cardamon pods and the dry ginger powder.

Pour onto a plate and let cool.

Grind all the ingredients into a fine powder (include in this process also the salt and the black pepper).

Sift the powder through a sieve. This sifting process separates the coarse sattu particles from the finer particles.

Place in an airtight jar.

Use your sattu to make pancakes, porridge, cookies, hot drinks, paruthas or ladoos.
