Directions

Clean the spinach leaves and chop it.

Finely chop the onions and the small green chilies.

Heat the mustard oil over low heat and toast the cumin seeds until fragrant and a dark golden color.

Add the onions and fry them until they are translucent.

Add the small green chilies, the ginger paste and the garlic paste. Mix well.

Add the spinach leaves, the salt, the cumin powder, the coriander powder, and the turmeric powder. Mix well. Cover. Cook for 5 to 7 minutes.

Ready! Enjoy! Serve it as an accompaniment to dal bhat (steamed rice and lentils) and various meat or vegetable curries.
