Yam Curry

Directions

Finely chop the onions and the garlic cloves.

Peel the yam and cut it into small cubes.

Chop the tomatoes and the coriander leaves.

Heat a pan with mustard oil and fry the fenugreek seeds and the cumin seeds in it.

When the fenugreek leaves turn brown, add the onions, the garlic cloves and the black pepper powder.

When the onions begin to soften, add the yam, the tomatoes, the green peas, the salt, the red chili powder, the turmeric powder and the coriander powder. Mix well.

Add the water.

Lower the heat and simmer for 20 minutes until the yam is tender.

Once ready, sprinkle the yam curry with a few coriander leaves.

Serve in a bowl with rice or roti. Enjoy!
