Nimkin

Directions

Mix the all-purpose flour and the baking powder in a bowl.

Melt the butter (or ghee) so that it resembles a cream (not liquid).

Mix everything together to form a dough. Add the water little by little to obtain a firm but malleable dough.

Cover and let stand for 30 minutes.

Divide your dough into several pieces and roll each one out to a thickness of about 5 mm. (You can put a little flour on the rolling surface to prevent it from sticking, but not too much).

Cut a straight line about 1.5 cm wide and 5 cm long.

Put the sunflower oil in a large frying pan and heat it.

Gently put the nimkin dough into the oil.

Cook the nimkin over high heat until golden brown, stirring frequently and very gently with a long-handled utensil. They cook quite quickly, in just a few minutes.

Once cooked, place the cooked nimkin on absorbent paper to absorb as much of the oil as possible.
