Honey Cookies are a deliciously sweet cookie with a lovely honey flavor throughout. They’re soft and chewy in the middle with irresistibly crispy edges.

Directions

Soften the margarine until it has the consistency of cream.

In a medium bowl, whisk together the all-purpose flour, the cornstarch, the salt, the baking powder, and the cinnamon powder. Set aside.

Mix the softened margarine and the sugar. Use a stand mixer fitted with a flat beater (or a hand-held electric mixer) at medium-high speed for about 1 to 2 minutes, until creamy.

Add the eggs, the honey, and the vanilla powder to the margarine-sugar mixture. Beat for 30 seconds at medium speed or until smooth.

Add half of the dry ingredients to the margarine mixture and mix on low speed for a few seconds, until some of the flour is incorporated. Be careful not to overmix the dough, or the cookies will be too dense and chewy. Add the remaining flour and mix briefly on low speed until no lumps remain. Do not overmix again.

Cover the bowl of cookie dough with plastic wrap and place it in the refrigerator for at least 30 minutes or overnight to chill.

Preheat the oven to 180 degrees for 30 minutes.

Once the cookie dough has cooled, scoop out two heaped tablespoons and form them into balls. For smaller cookies, scoop out one tablespoon of dough per cookie.

Place balls of cookie dough onto the prepared baking sheet, spacing them at least 5cm apart. Slightly flatten the top of each ball. Bake the cookies in a preheated oven at 180 degrees for 10 minutes, or until lightly golden. Bake smaller cookies for 7 to 9 minutes.
