Directions

Chop the tomatoes, the small green chilies and the coriander leaves.

Heat the mustard oil in a pan over medium-high heat. Add the soybeans and roast them until lightly browned.

Set the soybeans aside.

In the same pan, add the onions and the small green chilies and cook until the onions are soft and translucent.

Add the garlic paste, the ginger paste, the salt, the red chili powder, the cumin powder and the timur powder (or Sichuan pepper). Mix well and cook for 2 minutes.

Add the tomatoes and roast them. Mix well.

Add water and simmer for about 5 minutes.

Pour everything onto a plate and garnish with coriander leaves.

Ready! Enjoy! Serve it as an accompaniment to dal bhat (steamed rice and lentils) and various meat or vegetable curries.
