Phalsa Squash is a refreshing cold drink made from phalsa berries (also known as Indian Sherbet Berries) that are blended into a sweet, tangy syrup. Mixed with cold water or soda and ice, it’s a popular homemade summer drink in Nepal, especially in the Terai region, known for its cooling effect, rich antioxidants, and unique sour-sweet flavor.

Directions

In a pan, pour the oil and cumin seeds and roast them.

Using a mortar, crush them to make a powder.

Wash delicately the falsa (phalsa) in a colander under running water.

Then take a large bowl and, using your hands, crush the falsa to separate the pulp from the seeds.

Now add the sugar to the pulp, mix well and let it sit covered for 5 minutes.

Then add 1 cup of water to the pulp mixture and mix well.

Strain the liquid into a container and add the remaining water, the salt, the lemon juice and the roasted cumin powder.

For steps 5-7 you can also use a blinder.

To serve the falsa squash, fill a quarter of the glasses with ice cubes and pour this pink delight over them. Garnish with mint leaves and serve chilled. Enjoy!
