Directions

Mix the rice flour with the icing sugar (or brown sugar, or jaggery powder), the cardamom powder and the ghee.

Sprinkle with water (or milk) and knead until a paste is formed.

Let it rest covered for 30 minutes.

Form small balls of dough.

Flatten them with your hands and sprinkle with sesame or poppy seeds.

Heat the ghee in a wok or frying pan over low heat. Place the batter in the pan and fry until lightly golden. Do not turn the cookies over, but baste them with the hot ghee using a spoon for even browning.

Allow to drain on absorbent paper.

Ready! Enjoy them with a hot or cold drink.
