Rikikur (or Riki Kur) is a traditional savory potato pancake from the Sherpa community of Nepal. The name comes from the Sherpa words “riki” meaning potato and “kur” meaning bread or roti.

It is traditionally served with yack butter, somar (a pungent, spicy sauce made from fermented cream or buttermilk dregs) or served with a fresh sauce made from cheese (often serkam), spring onions, and green chilies.

Directions

Preparing the sauce

Finely chop the green onions, the garlic cloves and the small green chilies.

Use a mortar to grind the garlic, the green chilies and the green onions into a paste.

In a bowl, mix the salt, the paste, the milk and the cottage cheese.

Preparing the aloo roti

Peel and finely grate the potatoes.

Melt the butter (or ghee). But it should not be liquid.

Place the potatoes in a blender, along with the egg white, the all-purpose flour, the butter (or ghee) and the salt.

Mix everything together until you get a paste.

Heat the oil in a pan.

Pour the mashed potatoes into the center of the pan, then spread them out using a ladle.

Cook the aloo roti for 3 minutes on one side. Flip it over and continue cooking for 2 minutes.

Place the aloo roti on a plate.

Ready. Enjoy your meal. Spread with butter and the cottage cheese sauce. Have a hot or cold drink.
