Onion Pickles (Pyaaz ko Achar) is a quick, tangy, and spicy South Asian condiment made by marinating sliced onions or baby shallots in mustard oil, vinegar or lemon juice, and a blend of aromatic spices. Unlike traditional pickles that take weeks to ferment in the sun, instant onion pickle can be prepared in just 5 to 15 minutes and enjoyed immediately with meals like dal chawal, parathas, and biryani.

Directions

Sterilize the glass jars and their lids by boiling them in water for 10 minutes. Remove them from the water and let them air dry.

Chop the onions into small pieces.

Heat a little mustard oil over low heat and roast the fenugreek seeds, the coriander seeds, the cumin seeds, the fennel seeds and the mustard seeds until fragrant and a dark golden color.

Put all the seeds in a grinder and grind them into a fine powder.

In the same pan, pour in all the oil and heat it. Then add the onions and fry them for 3 to 4 minutes until they are translucent.

Put them in the blender bowl and roughly grind them.

Put them back in the pan and let them cook for 5 minutes.

Add the turmeric powder, the salt, the red chili powder, the white vinegar, the ginger paste and the garlic paste and mix well.

Add the seeds powder and the brown sugar (or jaggery powder). Mix well.

Simmer the onions for 15 minutes over low heat.

Transfer the pickles to a glass jar. Seal it tightly and place it in the refrigerator or in a dry place.

Ready! Enjoy the pickles with dal baht or other dishes.
