Hemp Achar (Bhang ko Achar)

Bhang ko Achar ( नेपाली भँगको अचार) is a traditional Nepalese condiment made from Hemp Seeds, which is creamy and smoky. It is usually prepared as Aloo Bhang ko Achar (potatoes mixed with ground hemp seeds) or served as a smooth sauce made with tomatoes and hemp seeds. Whole hemp seeds (bhang) are completely non-psychoactive and are highly valued in Nepal for their rich, slightly nutty flavor and high nutritional value.

Directions

Peel the potatoes if you are preparing Aloo Bhang ko Achar.

Boil the potatoes or tomatoes.

Heat a dry skillet over medium-low heat. Add the whole hemp seeds and dry-roast them for 2 to 3 minutes. Stir constantly until they begin to pop and release a distinct nutty aroma. Be careful not to burn them.

Remove them from the pan and let them cool.

Grind them into a fine powder.

In a bowl, mix the hemp powder, the salt, the red chili powder and the Timur powder (or Sichuan pepper).

Cut the potatoes into cubes if you are preparing Aloo Bhang ko Achar or crush the tomatoes.

Put the potatoes or tomatoes in the bowl and mix everything together.

Add the lemon juice and mix.

Ready! Enjoy the pickles with dal baht or other dishes.
