Buckwheat Fries (Kanchemba)

Kanchemba (कन्चेम्बा) is a traditional snack from the Thakali community of Nepal, often described as “Buckwheat Fries” or “Thakali Finger Chips”. It is a gluten-free dish made from buckwheat flour that is crunchy on the outside and soft on the inside.

Directions

Let the butter (or ghee) melt.

Heat the water until it boils.

Mix the buckwheat flour and the salt in a bowl.

Pour the water in gradually, stirring with a spoon.

Next, knead the dough until you obtain a firm and smooth dough.

Cover and let stand for 15 minutes.

Oil your hands with a little vegetable oil. Take a small portion of buckwheat flour and form a ball (about the size of a walnut). Then roll it between your palms to give it the shape of a little finger.

In a pan, heat the butter (or ghee) over medium heat.

Fry the Kanchemba for about 5 minutes until they become lightly golden and crispy.

Remove them and place them on absorbent paper to remove any excess oil.
