Directions

Wash and slice the bitter gourd into thin slices.

Heat the oil in a pan and fry the bitter gourd slices until golden brown and crispy.

Leave them aside.

Finely chop the tomatoes, the small green chilies and the onions.

Finely chop the garlic cloves.

Heat the sunflower oil over low heat and toast the cumin seeds, the sesame seeds and the mustard seeds until fragrant and a dark golden color.

Using a pestle, reduce the seeds to a powder (or using a grinder).

In the same pan, fry the small green chilies and the garlic cloves with the turmeric powder.

In a bowl, mix the bitter powder, the onions, the tomatoes, the garlic cloves, the small green chilies, the seeds powder, the salt, the Timur powder (or Sichuan pepper) and the lemon juice. Mix well.

Ready! Enjoy! You can also serve your salad with fish or meat. Have a hot or cold drink or a local alcohol.
