Dhikri

Dhikri is a traditional and healthy steamed rice cake, very popular among the Tharu community of Nepal. It is a staple food at the Maghi festival. It is also served at other festivals such as Dashain and Chhath.

Directions

Heat the water in a saucepan.

In a bowl, mix the rice flour, the salt and the cardamom powder.

Gradually add the lukewarm water and knead thoroughly until you obtain a soft, smooth and malleable dough.

Divide the dough into small balls of golf ball size.

Roll each ball between your palms to create cylindrical or sausage-shaped forms (approximately 3 to 4 inches long).

Grease the steamer basket to prevent food from sticking.

Arrange the dhikris on the tray, spacing them out.

Steam for 15 to 20 minutes, or until firm.

Ready. Enjoy! Serve with a sauce (chutney), pickles, meat/fish curry, vegetables curry and/or lentils. Have a hot or cold drink or a local alcohol.
