Dried Meat Curry (Sukuti ko Ledo)

Sukuti ko Ledo is a delicious and popular Nepalese dish, prepared with rehydrated dried meat (sukuti) in a thick, spicy sauce. The term “ledo” specifically refers to the smooth and creamy consistency of the dish.

Directions

Heat the water. Once the water is hot, turn off the heat.

Remove the meat from the water. Drain it.

Cut the sukuti into bite-sized pieces.

Chop the onions, the tomatoes and the coriander leaves.

Heat a pan with mustard oil and fry the fenugreek seeds.

When the fenugreeks seeds turn brown, add the onions.

When the onions turn golden, add the tomatoes, the turmeric powder and the bay leaves and mix well.

After a few minutes, add the dried meat, the ginger paste, the garlic paste, the cumin powder, the red chili powder, the meat masala , the garam masala and the salt and mix well.

After 2 minutes, add the water and let it simmer until the volume of water is reduced by half.

When the curry is ready, sprinkle it with a few coriander leaves.

Ready! Serve with chiura (beaten rice), rice, lentils, beans, pickles (achar), salads, vegetables, buckwheat dhindo, corn dhindo, buckwheat rotis, rotis, puri and/or naan. Have a hot or cold drink or a local alcohol. Enjoy!
