Eggplant Pakora, also known as Baingan Pakora, is a popular Indian snack made by deep-frying thin slices of eggplant coated in a spiced gram flour (besan) batter. It is a gluten-free and vegan-friendly treat often served during tea time or as a starter.

Directions

Cut the eggplants into slices about half a centimeter thick.

Cut the green chilies into small pieces.

Chop the coriander leaves.

In a bowl, mix the chickpea flour, the rice flour, the small green chilies, the garlic paste, the ginger paste, the salt, the cumin powder, the red chili powder, the turmeric powder, the chaat masala and the coriander leaves.

Add the water one tablespoon at a time and mix until you get a thick paste.

Incorporate the eggplant pieces into the batter and mix well so that they are well coated.

Pour the sunflower oil into a pan and heat it.

When the oil is moderately hot, use a spoon to dip all the eggplants into it.

Let them fry until they are golden brown and crispy. You can turn them over.

Remove them from the oil and place them on absorbent paper.

Ready! Enjoy! Serve with a chutney and a salad of your choice. Have a hot or cold drink or a local alcohol.
