Mix Vegetables Pakora are popular Indian fritters made by deep-frying thinly sliced or shredded vegetables coated in a spiced chickpea flour (besan) batter. They are a classic street food and a favorite home snack, especially during the rainy season or at teatime.

Directions

Peel the potatoes and the carrots.

Cut the cabbage, the cauliflower and the green chilies into small pieces.

Grate the potatoes and the carrots.

Chop the onions and the coriander leaves.

Finely chop the garlic and the ginger.

Using a mortar and pestle, crush the ginger and the garlic to obtain a paste.

Pour all the vegetables into a bowl with the small green chilies, the water, the egg, the flour and all the spices (salt, red chili powder, turmeric powder and cumin powder).

Mix all the ingredients together.

Pour the sunflower oil into a pan and heat it.

Form balls with the mixed ingredients.

Place the balls in the hot oil. Let them cook for 3 minutes, then put them back in the oil and let them cook for another 2 minutes.

Remove them from the oil and place them on absorbent paper.

Ready! Enjoy! Serve with chutney and salad of your choice.
