Preparation

Finely chop the onions.

Peel and boil the potatoes. Cook until tender.

Once the potatoes are cooked, turn off the heat. Drain them and rinse them with cold water.

Once cool enough to handle, cut the potatoes into pieces. Transfer them to a large bowl.

In the bowl, add the yogurt, the onions, the lemon juice, the red chili powder, the cumin powder, the timur powder, the turmeric powder, and the salt. Mix well. If the yogurt is too thick, add a little water to make it easier to mix.

Heat the mustard oil over low heat and toast the fenugreek seeds until they become fragrant and a dark golden color.

Pour the hot oil and fenugreek into the bowl. Mix everything together.
