Buff Fried Rice

Sel roti is a traditional Nepali fried rice dough, resembling a thin, sweet doughnut. It’s made from rice flour, and is often served during festivals like Dashain and Tihar.

Preparation

Wash the rice several times then cook it in water.

Before the rice is completely cooked, remove it from the heat and drain it. It will be more cooked once fried.

Let it cool normally.

Cut the chicken into small pieces.

Chop the tomatoes, the cabbage, the capsicum (remove the seeds first), the green beans and the onion.

Peel the carrots and grate them.

Finely chop the garlic cloves and the ginger.

Boil the cabbage, the capsicum and the green beans in hot water for 5 minutes.

Drain them when they are ready.

Heat the sunflower oil (or butter or ghee) in a pan.

As soon as the oil is hot, add the garlic and the ginger.

As soon as the garlic is golden, add the onions.

When the onions are translucent, add the chicken and cook. Stir several times.

Once cooked, remove the chicken from the pan and set aside.

Add a little oil to the pan if necessary and add all the vegetables, the turmeric powder, the red chili powder, the salt, and the black pepper. Cook for 3 to 4 minutes. Stir.

Add the soya sauce, the rice, and the chicken. Stir-fry for 2 minutes. Stir.

Pour all the contents into a plate.

Garnish with the coriander leaves.

Ready. Enjoy!
