Mango Kulfi

Bara (also spelled Baara or Wo) is a traditional and much-loved Newari dish from Nepal, especially popular in the Kathmandu Valley. It’s a savory, deep-fried lentil pancake made from ground black lentils (maas ko daal) and flavored with spices. Often described as a Nepali-style falafel pancake, bara is crispy on the outside and soft on the inside.

Preparation

Cut and peel the mangoes.

Put it in a blender.

Add the whipped cream, the condensed milk, the saffron and the cardamom powder to the blender.

Blend until you obtain a smooth texture.

Transfer the mixture into the kulfi molds, cover them with aluminum foil and insert an ice cream stick.

Leave them in the freezer for at least half a day.
